This question has gone back and forth many times over the years, and as said earlier is a matter of taste but that being said have been doing it all my life and am in my 50's. Key is to fillet them skin off, pack in water and freeze with no air in the bag. Don't save any over 3# unless you plan to smoke them.

When I was a kid we used to roll the fillets and put them in 1/2 gallon milk containers, fill with water and staple to top shut. worked great on fresh shrimp also.
