Mr. Dycus, I just did a little more research on shark eating and found some really valuable info at this site (http://www.beach-net.com/Sharkclean.html). It appears an ammonia build-up occurs in the meat that will make it taste bad if not properly handled.....and I can say the one we tried to eat was not cleaned as suggested. Hope this helps.
