ACTUALY YOU CAN FILET A WHITING WITHOUT CUTTING OFF THE HEAD.JUST START RIGHT BEHIND THE GILL & CUT DOWN TO THE THE BACKBONE , THEN GO ALL THE WAY TO THE TAIL. LEAVE A SMALL PORTION CONNNECTED TO THE TAIL. FLIP IT OVER & SLICE THE SKIN RIGHT OFF.THEN CUT OUT THE RIB CAGE.YOU ARE CORRECT ABOUT THE SHARPE KNIFE.WITH A LITTLE PRACTICE IT IS AMAZING HOW SMALL THEY CAN BE & HOW MUCH MEAT YOU CAN GET.
