I also don't cut the head off but rather cut down behind the gills and then back. USe this for most species caught on the island, other than the blow toads, flounder, and puppy drum. It is efficient and fast.

You have to have a good filet knife though. It might take a might longer to get a good knife sharp, but if you have a cheaper knife and the steel is too soft, you'll end up having to hit the stone every other fish. That's just a pain.
