Like most of you I am serious about my surf fishing and typically buy the best equipment I can afford - best meaning functionality, longevity of life and repairability. These attributes do not mean the most expenisve but in many cases you get what you pay for. The one item that frustrates me the most is a quality fillet knife that you can easily fillet fish with. I am not talking about something you cut bait with which I think Rappala and the like are well suited for. I am talking about a knife that will hold a sharp edge and last for years. I am having one custom made out of high carbon steel (not softer stainless which dull easily) and was thinking that maybe others have the same frustrations at fillet time. My question is do you guys feel there is a market for a quality fillet knife and would the serious fisherman/lady would lay out the dollars for one? I have done my research and believe it or not, there are not many higher end fillet knives readily available. One Florida company quoted me 18 months to have one made.
