the high carbon knives will discolor and rust quickly. Professional, usually German made knives, are the hardest(read holds an edge) and longest lasting knives around.

I agree with seahunter-get a sharpener and learn to use it. Also get a honing steel and use it often. This will keep the cutting cuting longer between sharpenings.
